Lobster Vichyssoise Recipe
Lobster recipe: Lobster Vichyssoise
This lobster recipe will show you how to make delicious vichyssoise even more tempting by adding some luscious lobster. Vichyssoise is a French soup that is to be served cold. Preferably cool the soup bowls before you pour Lobster Vichyssoise into them, to prevent the soup from reaching room temperature.
Lobster recipe: Lobster Vichyssoise ingredients
5 cups of chicken broth
4 cups of potatoes
2 cups of leek
¼ teaspoon of dried thyme leaf
1 teaspoon of black pepper
1 teaspoon of Worcestershire sauce
2 cups of cream
2 teaspoons of Dijon mustard
1.5 cups of lobster meat in bite sized pieces
¼ cup of parsley
¼ cup of scallions
Lobster Vichyssoise recipe instructions
- Peal and cube the potatoes (½-inch cubes).
- Chop the leek.
- Pour chicken broth into a small stock pot and bring to a boil.
- Add potatoes, leeks, thyme, pepper and Worcestershire sauce.
- Bring to a boil once more, cover and leave to simmer on low heat for 60 minutes.
- Remove the pot from the heat and drain off one cup of liquid.
- The rest of the mixture should be pureed together with cream and mustard. The easiest method is to use a food processor or blender.
- Add lobster meat and mix thoroughly.
- Place in the refrigerator to chill for at least four hours.
- Chop parsley and scallions.
- Place Lobster Vichyssoise in chilled bowls and use parsley and scallions as garnish.
