The lobster is a marvellous dish but has not always been so lucky, it was once thought of as the insects of the sea and used on farmlands as fertilizer. Today people have understood the real worth of the lobster and enjoy it only at special occasions. The lobster lives on either the bottom of a lake or on the continental shelf out in the sea. The seawater lobster is generally somewhat larger than the freshwater kind and is therefore more appreciated although there is no real difference in taste. The lobster is a shellfish meaning that it does not have a skeleton as humans but instead an outer shell which has the same function. The shell protects the lobster against danger but also means that once cracked there is nothing else inside than delicious meat. The lobster is generally a scavenger eating leftovers from other predators but is capable to catch its own prey if necessary. In order to grow larger the lobster will shed its shell, also known as molting, and hide until a new larger hard shell has been formed around its body.

How to steam lobster – Steaming

The secret behind a good steamed lobster is to begin with a lobster as fresh as possible, preferably straight off the fishing boat. Lobsters will die if kept to long out of their natural environment and the meat in their claws will deteriorate within just a couple of days. There is no idea in cooking a dead lobster since it surely will taste funny, in a fish tank a lobster will survive for a couple of days and in a fridge just an hour or so. When buying a lobster it will often have rubber bands around its claws in order to protecting other lobsters, the handlers and the one finally cooking the lobster.
