Lobster Salad Recipe
Tarragon lobster salad recipe
Tarragon lobster salad taste great on its own, but you can also serve it with a green salad or use it to fill pita breads. This recipe makes 4-6 servings.
Tarragon lobster salad recipe ingredients
4 ( 1 ½ pound) live lobsters
¼ cup of finely chopped shallot
3 tablespoons of fresh lemon juice
½ teaspoon of salt
2 tablespoons of finely chopped fresh tarragon
1/3 cup of mayonnaise
¼ teaspoon of black pepper
Tarragon lobster salad recipe preparation
- Chop shallot until you have ¼ cup of finely chopped shallot.
- Place shallot in a bowl, add the lemon juice, add salt and blend all ingredients well.
- Leave the bowl at room temperature for 30 minutes.
- While the bowl is standing, you can cook the lobsters. Place the live lobsters in boiling salted water. Cover the pot loosely and boil over moderate high heat for 9 minutes. Transfer the lobsters to the sink and let them cool off. If you do not have a really large pot, it is better to boil two lobsters at the time.
- When the lobsters re cool, it is time to remove the meat from claws, joints and tails. Tomalley, shells and roe should not be included in this recipe.
- Cut the lobster meat into ½-inch pieces.
- Chop fresh tarragon until you have 2 tablespoons of finely chopped tarragon.
- Add tarragon, mayonnaise and pepper to the shallots and whisk the ingredients together.
- Add the lobster meat pieces and toss gently until they have become coated.
- Serve.
