Lobster With Saffron Recipe

This lobster recipe contains saffron which adds delicious taste as well as vibrant colour. Saffron is an exclusive spice derived from the saffron crocus (Crocus sativus). It is their stigmas and styles that are collected, dried and used for cooking. Saffron is the most expensive spice in the world (by weight). Fortunately, it is a powerful spice and ½ teaspoon of saffron threads is enough to give this lobster recipe delicious taste as well as vivid yellow colouration.

Lobster recipe with saffron ingredients

8 cups of water
½ teaspoon of ground turmeric
½ teaspoon of saffron threads
Salt
1 tablespoons of olive oil
½ pound fresh linguine
1 teaspoon of olive oil
½ cup of onions
1 teaspoon of garlic
½ cup of pitted Kalamata black olives
½ pint of red tomatoes
½ pint of yellow tomatoes
1 pound of cooked lobster meat 
½ cup of Piri Piri sauce
Salt
Freshly ground black pepper

4 ounces Parmigiano-Reggiano cheese, grated
1 tablespoon finely chopped fresh parsley leaves

Lobster with saffron recipe directions

  1. Add water, tumeric and saffron to a saucepan and heat over medium heat.
  2. Season with some salt.
  3. Add 1 tablespoon of olive oil.
  4. Bring the saffron mixture to a boil and continue to boil for 5 minutes.
  5. Place the linguine in the water and cook until it is ready (the exact time will depend on your personal pasta preferences).
  6. Use cool water to drain the linguine.
  7. Toss linguine with 1 teaspoon of olive oil and set aside.
  8. Chop onions and garlic.
  9. Cut the olives in halves.
  10. Cut both red and yellow tomatoes in halves.
  11. Cut the lobster meat into ¼-inch pieces.
  12. Heat up 1 tablespoon of the Piri Piri sauce into a sauté pan.
  13. When the Piri Piri is hot, add chopped onions and garlic.
  14. Sauté the ingredients for 1 minute.
  15. Add olives, red tomatoes, yellow tomatoes and lobster meat to the sauté pan.
  16. Add salt and pepper to taste.
  17. Place linguine in the sauce pan and toss.
  18. Sauté for one additional minute.
  19. Remove from the heat and serve immediately.

You can use parsley and grated parmesan cheese to garnish this lobster recipe.
