How To Cook Live Lobster
You have to cook lobsters live, as they decay so fast after death that they soon become unfit for consumption. That is why you have to ensure that the lobsters arrive alive, even if not fully. The next best thing is to cook them the moment they are dead. Otherwise, you will risk your health.
Some like to grill or broil lobsters, but most people prefer to boil or steam them.
Instructions on how to cook live lobster
Follow these simple steps for cooking live lobsters by boiling:
- Take a lobster pot/stock pot, fill it with enough water and bring it to a vigorous boil.
- Hold the lobsters firmly behind the arms and plunge them head first into the boiling water one by one. Put a lid on the pot.
- Allow a little time to let the water to return to a soft boil. Once it starts boiling, time your lobster cooking. About 10 minutes should be enough for a 1 lb lobster and 12 minutes for a 1 1/2lb lobster. A two-pound lobster may take another couple of minutes or so at the most. Hard - shell lobsters may take more time, about 3 or 4 minutes more than the soft-shell ones. Note that the times given here are only approximate.
- Well-cooked lobsters look bright red or pink. Their tails are curled. Take care that the lobsters are not overcooked; as otherwise, the meat loses its flavor.
- Wash them under fresh water and put them on a plate.
